Sunday in my City


My parents are here visiting
It's been raining everyday since they arrived
It's happen before when they visited us in Germany
But when your in Germany you don't let the rain stop you.

In Buffalo the rain stops you
or maybe it's the humidity
 or the large mosquitos

Yesterday we ventured out to the Science Museum 
for the Body Worlds Vitals exhibit 

We saw this in Germany and it was pretty amazing
This was a smaller scale one but still just as interesting.
If it comes to your city I highly recommend it. 




We also saw this big guy and a few others
I'm more of a art museum kinda of girl 
but it was a nice change of scenery on a rainy day.

Friday Fragments



Happy Friday!!
Joining Unknown Mami today for Friday Fragments! 
It's been a busy month of June
I haven't had much time for blogging
So here is the latest going on's in our house.

 Sophie is back to hiding under my bed, when she knows I'm leaving!
Poor girl is confused! 


Katelyn went to Minnesota for five days to visit her friend.
She had a great time and we barely heard from her! 
She can now knock two states off her list that she has never been to. 
Her friend's family has a cabin in Wisconsin so they spent the night there.
I'm happy that these three were together again...laughing, shopping and god knows what else. 




While Katelyn was gone... her truck received bad news...
It's 18 years was over....
It's been a great truck...
the one we've had since she was in a car seat...
Now on it's way to auction surly to be parted out! 
177,000 mile later 
RIP Silver! 

So what did that mean for a family that needs three cars to get us all to work etc...
We went car shopping and found a gently used Toyota Rav4 for me and I passed my car down to Katelyn. Which she quickly moved all my stuff out and moved in before Silver was out of our driveway! 





Last night I went to The Book of Mormon at Sheas Theater. It was so good and brought back memories of living in Utah. I highly recommend seeing it if it's in your city!

Pizza Pizza Pizza

Every Friday is our Pizza Night. My hubby always makes a homemade pizza. It's our Friday thing....except two weeks ago I started a new weight loss program through my doctor's office. Pizza is not on the plan! Either is alcohol, coffee, grains, basically I'm eating all vegetables. limited fruits and lean protein. I've never felt better. But I do miss participating in pizza night. Until I was given this recipe for Cauliflower Crust Pizza. I would never believe that it would be good...I'm here to tell you it is amazing and a perfect healthy substitute.
Ingredients
1 cup cooked, riced cauliflower 
1 cup shredded mozzarella ( I used less)
1 egg, beaten
1 tsp. dried oregano 
1/2 tsp. crushed garlic
1/2 tsp. garlic salt
pizza sauce
shredded cheese 
toppings

Directions
To "Rice" the Cauliflower
take 1 large head of Cauliflower, remove stems and leaves and chop florets into chunks. Add to food processor and pulse until it looks like grain. Place the riced cauliflower in microwavable dish and microwave for 8 minutes. One large head of cauliflower produces 3 cups store extra in refrigerator up to one week. 
Mix together riced cauliflower, egg,1 cup or less of mozzarella, oregano, garlic and garlic salt. 
Preheat oven to 450 degrees. Spray pizza pan with non stick spray. Transfer to pan and using your hands pat out into 9 inch round. Bake at 450 degrees for 15 minutes. 
Remove from oven add sauce, cheese and toppings. Place under a broiler at high heat until cheese is melted (approx. 3-4 minutes) I didn't broil I put in oven for 6-8 minutes more.

Weekend in pictures


My goal for June was to pick up my camera again. My real camera not my Iphone. I'm glad I did..It was fun to take pictures again. We are all planted and our garden is starting to pop with color. We have new neighbors on the eves of our shed....four baby robins. The mom was not happy about me and my need for a picture. It was a nice weekend a little of everything.....rain and thunderstorms and bouts of sunshine. The cottonwood trees are blowing cotton at times it looked like snow. I love that June is here!
