Peach Cobbler

Today I made Peach Cobbler for my lovely family! Its an easy, recipe the hardest part is finding ripe peaches.










Peach Cobbler:

8-9 peaches (peeled and cut up)
2 cups sugar
1 stick of butter
3/4 cup flour
2 tsp baking Powder
pinch of salt
1 tsp vanilla


Mix peaches and 1 cup of sugar in a bowl. (Set aside) Put butter in a deep pan (13x9) and set in a 350' oven to melt. Stir the remaining ingredients in a bowl and pour over the melted butter. (Do not stir) Place peaches over the top. Bake 1 hr. or until the crust is a golden brown. Batter rises on top during the baking.

I'm heading to the farmer's market during my lunch break and can't wait to scoop up some peaches! We're having company this weekend for the Labor Day holiday and I think this is the perfect dish for a big group (I may throw some raspberries in, too!)
