Pizza Pizza Pizza

Every Friday is our Pizza Night. My hubby always makes a homemade pizza. It's our Friday thing....except two weeks ago I started a new weight loss program through my doctor's office. Pizza is not on the plan! Either is alcohol, coffee, grains, basically I'm eating all vegetables. limited fruits and lean protein. I've never felt better. But I do miss participating in pizza night. Until I was given this recipe for Cauliflower Crust Pizza. I would never believe that it would be good...I'm here to tell you it is amazing and a perfect healthy substitute.
Ingredients
1 cup cooked, riced cauliflower 
1 cup shredded mozzarella ( I used less)
1 egg, beaten
1 tsp. dried oregano 
1/2 tsp. crushed garlic
1/2 tsp. garlic salt
pizza sauce
shredded cheese 
toppings

Directions
To "Rice" the Cauliflower
take 1 large head of Cauliflower, remove stems and leaves and chop florets into chunks. Add to food processor and pulse until it looks like grain. Place the riced cauliflower in microwavable dish and microwave for 8 minutes. One large head of cauliflower produces 3 cups store extra in refrigerator up to one week. 
Mix together riced cauliflower, egg,1 cup or less of mozzarella, oregano, garlic and garlic salt. 
Preheat oven to 450 degrees. Spray pizza pan with non stick spray. Transfer to pan and using your hands pat out into 9 inch round. Bake at 450 degrees for 15 minutes. 
Remove from oven add sauce, cheese and toppings. Place under a broiler at high heat until cheese is melted (approx. 3-4 minutes) I didn't broil I put in oven for 6-8 minutes more.

I 've had that pizza crust and it is good. I have to be careful with the carbs in pizza, so it is a good alternative. Good luck with the new diet. You will be able to get lots of fresh veggies this time of year :-)

There are a lot of things you can make that are low carb using cauliflower. Good luck with your diet and the pizza looks great. I have to admit that I love eating a healthy diet with veggies.

Riced cauliflower....... thats different. I'm all for trying these things. its the cheese that does it with pizza, isn't it? But I would certainly miss it.

Wow. Cauliflower crust. Sounds good. I used to make homemade pizza often. It's fun and healthier than the stuff in the pizza chains. Enjoy!
